High grown Central American coffees are practically the golden gem of coffees. Light roasts show more of the malty sweetness and can express itself as a graham cracker or wafer cookie. Developing into a city roast will exhibit more of a candy or fruit like sweetness. Pushing the roast darker will allow for the chocolate notes to take over with a hint of vanilla!
